Prime Rib Roast (with a bruschetta side)

The terrible thing about dead week before finals and studying at home is I just end up experimenting on food!  I just want to cook and eat all day while I'm studying, and the consequence is that I just hang around the kitchen (which is located behind me) and munch non-stop.  Occasionally, I visit the Jan Powers Wednesday markets at Redacliff Place in the City, and when I do, I'm tempted to buy everything!

I've never stopped at the meat cart before, but today I decided to, and after spending an hour watching Anthony Bourdain videos on Youtube last night, I was inspired to make me some prime rib!  It's probably too much red meat for myself - but hey, better than being anemic, right?  It smells so good in my apartment right now, I can't even focus on studying!  Below are the simple recipes that I kinda just put together.  Again, simple, fresh, and perfect for the student budget.
Prime Rib
For the rub: oregano, rosemary, coriander, salt, pepper, and garlic
Roast in the oven for about 90 minutes (depending on how much meat you have, may take up to 3 hours) at 180C

Bruschetta
Chopped up cilantro (only cause I didn't have basil)
Cherry or grape tomatoes halved or diced
Fetta cheese
Olive oil & balsamic vinegar

I mixed the fetta, cilantro, olive oil, and balsamic vinegar together and halved my tomatoes (for ease), and just topped it all on toasted sourdough. Simple as that!

For the ribs: 16AUD
Bruschetta: 10AUD

26AUD for four people - I'd say that's pretty good, especially for fresh produce and a good cut of meat from the farmer's market!
