Lemon Bars!

Lemon bars are one of my favorite desserts, mostly because of the citrus component, but also because of the crust.  Lemons and grapefruits are some of my favorite things in the world, but cakes and tarts here come at $6 a pop!  On a student budget, that's a big chunk of my daily food funds, so I decided to make my own.  Lemon bars are so delicious, and I've found another reason to love them - they're so easy to make!

Here's what I used:
1 cup butter, softened
1/2 cup white sugar
2 cups all purpose flour

4 eggs
1 1/4 cups white sugar
1/4 cups all purpose flour
Juice from 2 lemons (or substitute with lime)
Lemon zest
Confectioner's sugar (for decoration/dusting)

The first part of the ingredients are for the crust, the second part is for the top.
1. Preheat the oven to 175C (350F).
2. Mix the first three ingredients together, and press into the bottom of a pan (9x13 recommended)
3. Bake for about 20 minutes, and let cool for five minutes.
4. Mix 1 1/4 cups white sugar and 1/4 cups flour, then add in the eggs, lemon juice and zest.
5. Pour on top of the crust.
6. Bake for another 20 minutes.
7. Let cool, and dust on a light layer of confectioner's sugar.
