Baked Eggs for Breakfast

For a lazy breakfast option, I got a couple of cherry tomatoes and sundried tomatoes, a handful of baby spinach leaves, and two eggs (or just one egg yolk), and threw them in a mini ramekin to bake.  I cracked the eggs in last so that they would be at the top, and baked all of it at 180C/350F for about 20-25 minutes.  It took me about 5 minutes to prep everything, which is wonderful during exam period.

For a quick open sandwich, take a bread roll of your choice, cut up an avocado and cut up half.  I smeared the half and cracked some salt and pepper on top.  Then, top it up with the baked eggs of course!  The egg yolk may still be a bit uncooked on the inside, which is the way I like it, but you can pop it in the oven for another five if it floats your boat!

This makes for a happy light (and cheap) breakfast at home!  Enjoy!
