Peanut Butter M&M Cookies

This is a super late post on what I made for Valentines day, but it turned out alright, so here it is!
I brought back Valentines themed Peanut Butter M&Ms from the U.S. this time around, and decided to make cookies out of them, to prevent me from popping them in my mouth one by one and devouring the whole bag. [Would happen]  The cookie base is just a simple sugar cookie, which I added almond extract to instead of vanilla extract, but I think I would've liked it even better if it were a peanut butter or cocoa base.

Here's what I used:
260 grams of all purpose flour
1 1/4 tsp baking soda
1/4 tsp salt
160 grams unsalted butter
130 grams granulated white sugar
1 large egg
1 large egg yolk
2 tsp almond extract
200 grams Peanut Butter M&Ms

First, whisk the flour, baking soda, and salt together.  Whisk the butter and sugars together until light and fluffy, and add the egg and egg yolk, as well as the almond extract.  I gradually added the flour mixture into the creamed mixture (sifting the flour if you'd like), and refrigerated my dough for about 30 min.
Preheating the oven to 180C, I prepped my dough into approximately golf ball sized balls and gently flattened them.  I then pressed the M&Ms into the dough, about 4-5 pieces each.  Once the oven is preheated, I baked them for about 13 minutes until the edges are a light golden brown.  Let the cookies cool on a rack, and they're ready to eat! Mmm.... =)
