Malaysian Chicken Laksa [Take One]
I've been rather lazy lately with cooking, but since I ditched class today and went to the Valley to get my Hobbit Map dress, I decided it was time that I bought some groceries and make myself something Asian. Since Josefina had laksa for lunch with me the other day, I'd been craving it, so I decided to try and make it myself.
500g organic chicken breast
400ml coconut milk
200ml chicken stock
1 bag bean sprouts
1 handful of snow peas
110g laksa paste
1 tsp crushed coriander seed
1 handful of vermicelli/rice noodles
I pretty much just adopted the taste.com recipe, which seemed to be the best one that came up. I sauteed everything together, then brought the coconut milk, chicken stock, and laksa paste to a boil. It actually took me a while to cook everything, and though I wasn't particularly satisfied with the turnout, it tasted good. I'm not sure what I was missing, but it may just be that I used a paste instead of fresh ingredients...
